This December, Saturday Stories at Ramada Lucknow celebrates one of India’s most treasured culinary traditions — Dum Pukht, the slow-cooking art that coaxes unmatched depth and aroma from every ingredient. Each Saturday, guests can look forward to an indulgent, thoughtfully curated showcase of dishes that honour this centuries-old technique, crafted by our chefs with the finesse it deserves.
At the heart of the menu lies the legendary Dum Pukht Biryani, where fragrant basmati rice and tender lamb are gently cooked in a sealed handi with mace, ittar and kewra. Each serving reveals layers of flavour shaped only by time and patience. The feast continues with the silky Dum Pukht Kakori, the iconic melt-in-your-mouth lamb kebab scented with cloves and cinnamon — an essential hallmark of Awadhi refinement.
For those who favour rich gravies, the Murgh Handi Qorma offers boneless chicken slow-simmered in a lush blend of brown onion, garlic, yoghurt, saffron and rosewater. Vegetarians can savour the comfort of Palak Paneer, where creamed spinach embraces soft homemade paneer in a warm, mildly spiced harmony.

Seafood lovers will be drawn to the Jhinga Dum Nisha, featuring jumbo prawns marinated in yoghurt and cheese, tandoor-kissed and finished on dum. The mustard-rich Mahi Sarson, prepared with Kolkata bekti, delivers a sharp yet balanced burst of flavour.
Another signature, Seekh Gilafi Dum Pukht, brings minced chicken kebabs wrapped in juicy tomatoes and capsicum for a colourful, aromatic bite. The royal Shahi Nehari, cooked overnight with potli masala and enriched with almond and rice extract, completes the savoury selection.
The evening ends with indulgent sweetness – from the saffron-honey drenched Gulab Jamun filled with nuts to the regal Kulfi Badshah Pasand, crowned with gold leaf.
Every Saturday in December, immerse yourself in a dining story crafted slowly, beautifully, and with heartfelt Awadhi tradition.
